Richard Blais (born February 19, 1972) is an American chef, reality show contestant, restaurateur and author. He was the runner-up of the fourth season of the reality television show Top Chef and the winner of season eight, Top Chef: All-Stars.[1] Blais currently hosts the TASTED YouTube show BurgerLab.

Education and early career

Blais was born in Uniondale, New York. He received an AOS in culinary arts from The Culinary Institute of America and has studied under chefs Thomas Keller, Daniel Boulud, and Ferran Adrià. Blais has also studied in numerous famed restaurants, including Chez Panisse.

Career

In 2001, Blais opened his first restaurant, called "BLAIS", to critical national acclaim. In 2005, he led One Midtown Kitchen, which received a four-star review in The Atlanta Journal-Constitution.[2] His company TrailBlais is a partner in a modern hamburger restaurant, FLIP Burger Boutique.[3] Blais is also doing corporate innovation work and product endorsement for companies like Diageo and Garrett Popcorn. In October 2012 Blais opened The Spence in partnership with Concentrics Hospitality][4]

Top Chef

Blais appeared as a contestant on the fourth season of Bravo's Top Chef.[5] He went on to become the runner-up, losing to Stephanie Izard.

After the completion of Top Chef Season 4, Blais continued to do work for the show in the roles of promotion and blogging. Blais teamed up with fellow season 4 contestant Andrew D'Ambrosi for a cooking demonstration in Union Square aboard the Top Chef Bus.[6]

Blais blogged on Bravotv.com regarding the show's 5th season [7] Blais also appeared in the final challenge of the fifth season, serving as the sous chef for eventual winner Hosea Rosenberg.

In August 2009, Blais appeared on Bravo's spin off, Top Chef Masters, assisting eventual winner Rick Bayless.

In 2010, Blais competed in Top Chef: All-Stars. He won the competition, earning the title of Top Chef by defeating Mike Isabella in the season finale, which aired on March 30, 2011.

In 2012, Blais was one of the featured participants on the show Life After Top Chef.

Blais Off

Starting in December 17, 2010, Blais hosted the show Blais Off on The Science Channel, where he use his scientific cooking techniques to reinvent classic foods and took "his experiments on the road, visiting some of the most popular eateries in America."[8]

Other television appearances

Blais has appeared several times on the show Iron Chef America, once on the "Battle Chickpea" episode with Top Chef: Las Vegas contestant Eli Kirshtein as his sous chef and several times as a sous chef for Iron Chef Cat Cora.

On Season 1, Episode 3 of Guy's Grocery Games, Richard Blais appeared as a guest judge.

Restaurants

Richard Blais runs three restaurants:

  • FLIP Burger Boutique - A burger-focused restaurant with two locations in Atlanta and one in Birmingham.[9]
  • HD-1 - aka Haute Doggery: A hot dog hut in the Poncey-Highlands neighborhood of Atlanta.[10]
  • The Spence - A joint venture with Concentrics Restaurants that opened in Atlanta on May 26, 2012.[11][12]

Books

In July 2011, Blais signed a cookbook deal with Clarkson Potter, a division of Random House. The book, "Try This at Home: Recipes from My Head to Your Plate," was released on February 26, 2013.

Other accomplishments

In November 2011, Blais ran the ING New York City marathon for Alliance for a Healthier Generation. It was his first marathon, and he completed it in 4:31:54.
